– 1/2 cup all-purpose flour

– 1/2 teaspoon baking soda

– 1/2 cup granulated sugar

– 1/2 cup light brown sugar

– 1/2 cup peanut butter

– 1 large egg

– 1 1/2 cups old fashioned oats

– 1 cup diced apple, skin removed

Instructions

1-First off, preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup a breeze. This simple start sets the stage for success, just like in many of our favorite recipes on the blog.

2-Next, in a medium bowl, whisk together the dry ingredients: 1/2 cup all-purpose flour, 1/2 teaspoon baking soda, 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground allspice, and 1/4 teaspoon salt until they’re well combined. In another bowl, beat 1/2 cup unsalted butter at room temperature with 1/2 cup granulated sugar and 1/2 cup light brown sugar until it’s creamy and smooth. Then, mix in 1/2 cup peanut butter until everything blends perfectly, followed by adding 1 large egg and 1 teaspoon vanilla extract for that extra flavor boost.

3-Gradually add the dry mixture to the wet ingredients on low speed until just mixed, then stir in 1 1/2 cups old fashioned oats and 1 cup diced apple (skin removed) by hand. Roll the dough into balls about the size of a tablespoon and place them on the prepared baking sheet. Bake for 11 to 12 minutes until the edges are lightly golden, let them cool on the sheet for two minutes, then transfer to a rack to cool completely. Do not chill the dough before baking to avoid excessive spreading, as the moisture from the apples keeps things just right.
