In another bowl, beat 1/2 cup unsalted butter at room temperature with 1/2 cup granulated sugar and 1/2 cup light brown sugar until it’s creamy and smooth. Then, mix in 1/2 cup peanut butter until everything blends perfectly, followed by adding 1 large egg and 1 teaspoon vanilla extract for that extra flavor boost.
3-Gradually add the dry mixture to the wet ingredients on low speed until just mixed, then stir in 1 1/2 cups old fashioned oats and 1 cup diced apple (skin removed) by hand. Roll the dough into balls about the size of a tablespoon and place them on the prepared baking sheet.
