Instructions

2-Cut in 1/2 cup butter until the mixture becomes crumbly, then reserve 1 cup of this for the topping.
3-Press the remaining crumb mixture evenly into the prepared pan and bake for 10 minutes.
4-In another bowl, beat the remaining 1/2 cup butter and 1 cup sugar until creamy; add 3 large eggs one at a time, then gradually mix in the remaining 1 cup flour and the well-drained 20-ounce can of crushed pineapple.
5-Spread this mixture over the baked crust, sprinkle with the reserved crumb topping, and bake for an additional 25 minutes or until a wooden pick inserted comes out clean.
6-Finally, garnish with toasted flaked coconut and let the bars cool completely before cutting into squares.
