Instructions
1-Grind pistachios finely in a food processor, then blend with olive oil until a thick, coarse paste forms.
2-Cream together the softened butter, light brown sugar, and granulated sugar until pale and fluffy using a mixer.
3-Beat in the egg, vanilla extract, and almond extract if using until smooth.
4-Mix the pistachio paste into the wet ingredients.
5-In a separate bowl, whisk together flour, matcha powder (if using), baking soda, and salt, then fold into the wet mixture until combined.
6-Fold in the dark chocolate chunks evenly.
7-Cover and refrigerate the dough for at least 2 hours to enhance flavor and texture.
8-Preheat oven to 350Β°F (175Β°C) and line baking sheets with parchment paper.
9-Scoop about 1.35-ounce balls of dough onto the baking sheets spaced apart.
10-Sprinkle with ground pistachios and optional flaky salt.
