Ingredients
– 1 cup (120 g) raw shelled pistachios or raw slivered pistachios
– 1 teaspoon neutral oil such as avocado or grapeseed oil (water can be substituted if consuming quickly)
Instructions
1-Blanch and Peel (for shelled pistachios): Bring a pot of water to a boil. Add raw shelled pistachios, remove from heat, and soak for 30 seconds. Transfer to ice water. Drain on a clean kitchen towel and rub gently to remove the brown skins; remove any stubborn skins by hand. (Skip this step if using slivered pistachios).
2-Process: Place peeled pistachios (or slivered pistachios) in a food processor.
3-Grind: Process for 5-10 minutes. The mixture will progress from whole nuts to crumbs, then powder, and finally a paste.
4-Add Oil: Add the 1 teaspoon of neutral oil to help blend smoother and improve shelf life.
5-Blend: Continue processing for another 5-10 minutes until the paste reaches a smooth consistency.
6-Store: Transfer to an airtight container. Refrigerate for up to 1-2 weeks or freeze for up to 3 months.
