Ingredients
– 2 cups all-purpose flour, spooned and leveled
– Β½ teaspoon salt
– 1 teaspoon baking soda
– Β½ teaspoon baking powder
– 1 teaspoon ground cloves
– 1 teaspoon ground cinnamon
– 1 teaspoon ground nutmeg
– 1Β½ sticks (ΒΎ cup) unsalted butter, softened
– 2 cups sugar
– 2 large eggs
– 1 (15-ounce) can 100% pure pumpkin
Instructions
1-In a medium bowl, whisk together the flour, salt, baking soda, baking powder, cloves, cinnamon, and nutmeg until well combined.
2-In a large bowl or mixer, beat the butter and sugar until just blended, creating a smooth base.
3-Add the eggs one at a time, beating well after each addition, then continue beating until the mixture is light and fluffy.
4-Beat in the pumpkin; the mixture might look grainy or curdled, but thatβs perfectly normal and will even out.
5-Add the dry ingredients to the wet mixture on low speed until just combined, avoiding overmixing to keep the bread tender.
6-Divide the batter evenly between the prepared pans for uniform loaves.
7-Bake for 65 to 75 minutes, or until a cake tester inserted in the center comes out clean. Let the loaves cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
