Ingredients

– 6 bone-in, skin-on chicken thighs

– 6 cloves garlic, sliced into halves

– 1 tablespoon olive oil

– 2 lemons, divided (one thinly sliced, the other cut into wedges)

– 1 tablespoon chopped fresh poultry herbs (such as a blend of rosemary, thyme, marjoram, oregano, or sage), plus more for serving

– Salt and pepper to taste

Instructions

1-First, preheat the oven to 400 degrees Fahrenheit. Rub both sides of each of the 6 chicken thighs with the cut side of the 6 garlic halves, then set aside the garlic. Next, season each side of the chicken with salt and pepper.

2-Heat 1 tablespoon of olive oil in a 12-inch oven-safe skillet over medium-high heat. Once hot, add the chicken skin side down and cook until the bottom is golden brown, about 8 minutes, draining the rendered fat halfway through. Transfer the chicken to a plate and drain most of the oil from the pan, leaving about 1 teaspoon to coat it.

3-Place the thinly sliced half of one lemon and the reserved garlic halves in the pan. Top with the chicken and sprinkle with 1 tablespoon of chopped fresh herbs. Bake in the oven until the chicken reaches an internal temperature of 170 degrees Fahrenheit, about 18 to 20 minutes.

4-After baking, slice the garlic halves and serve with the chicken. Garnish with additional fresh herbs as desired, and serve the remaining lemon wedges for spritzing. The whole process, including prep time of 5 minutes and cook time of 30 minutes, ensures a quick yet delicious meal.
