Ingredients
14–15 ounces canned salmon or salmon in packets well drained
2 tablespoons olive oil divided
2 tablespoons unsalted butter divided
1 cup finely diced onion
1/2 red bell pepper seeded and diced
1/2 cup bread crumbs
1 large egg lightly beaten
2 tablespoons mayonnaise
1 teaspoon Worcestershire sauce
1 teaspoon garlic salt (or substitute with 1/2 teaspoon fine sea salt and 1/4 teaspoon garlic powder or season to taste)
1/4 teaspoon freshly ground black pepper
1/4 cup finely minced parsley
Instructions
1-Heat 1 tablespoon olive oil and 1 tablespoon butter in a medium skillet over medium heat. Add the diced onion and bell pepper, and sautΓ© until golden and softened, about 7 to 9 minutes, then remove from heat.
2-In a large bowl, combine the flaked salmon, sautΓ©ed onion and bell pepper, bread crumbs, beaten egg, mayonnaise, Worcestershire sauce, garlic salt, black pepper, and chopped parsley. Stir to mix well, keeping the mixture gentle to maintain texture.
3-Form the mixture into patties approximately 2 inches wide and 1/3 to 1/2 inch thick, using about a heaping tablespoon of mixture per patty. Handle the mixture with care to avoid breaking it apart.
4-In a clean non-stick pan, heat 1 tablespoon oil and 1 tablespoon butter until hot. Add the patties in a single layer and sautΓ© for 3 to 4 minutes per side, or until golden brown and cooked through. If they brown too quickly, lower the heat slightly.
5-Remove the cooked patties onto a paper towel-lined plate. Repeat with the remaining patties and serve them garnished with fresh parsley for a nice finish.
