Ingredients
– 1 teaspoon neutral oil for greasing
– 1 tablespoon sesame oil
– 1/4 cup melted coconut oil or olive oil
– 3 tablespoons soy sauce
– 1 tablespoon rice vinegar or a similar vinegar
– 1 tablespoon Sriracha (optional)
– 8 pieces bone-in, skin-on chicken thighs or drumsticks
– Salt and pepper to taste
– 1 head cabbage (2 to 3 pounds)
Instructions
1-Preheat the oven to 425ยฐF and grease the sheet pan with neutral oil.
2-Mix sesame oil, melted coconut oil or olive oil, soy sauce, rice vinegar, and Sriracha if desired.
3-Season the chicken with salt and pepper, then marinate it in part of the dressing.
4-Cut the cabbage into 1-inch wedges, season, and toss with the remaining dressing.
5-Roast the chicken first for 10 minutes, then add the cabbage and roast for another 20-25 minutes.
6-Finish by resting the chicken and roasting the cabbage a bit longer for caramelization.
