Ingredients
1 1/2 cups warm water (around 100Β°F or 38Β°C)
2 1/4 teaspoons instant or active dry yeast (1 packet)
1 tablespoon brown sugar or granulated sugar
1 teaspoon salt
1 tablespoon unsalted butter, melted and slightly cooled
3 3/4 to 4 cups all-purpose flour, plus extra for dusting
Coarse salt or cinnamon sugar for topping (optional)
1/2 cup baking soda dissolved in 9 cups water for baking soda bath
mustard or preferred dip for serving

Instructions
1-Combine warm water, yeast, and sugar. Whisk and let sit 5 minutes until foamy. This activates the yeast.
2-Add salt, melted butter, and 3 cups flour. Mix on low for 1 minute. Scrape the bowl, add 3/4 cup flour, and mix until dough pulls away from sides, about 2 minutes. Add up to 1/4 cup more if sticky.
3-Knead by hand on floured surface or with dough hook for 5 minutes until soft and tacky. It should pass the windowpane test: stretch a piece thin without tearing.
4-Cover and rest 10 to 30 minutes. This relaxes the gluten.
5-Divide dough into 6 portions. Roll each into a 20-inch rope, cut into 1.5 to 2 inch pieces. Rest if dough shrinks.
6-Boil baking soda bath (1/2 cup soda in 9 cups water). Drop 8 to 10 bites in for 10 to 15 seconds. Remove with slotted spoon and drain.
7-Arrange on sheets. Sprinkle coarse salt right after boiling, or leave plain for cinnamon sugar.
8-Bake 15 minutes until golden brown.
9-For cinnamon sugar: Bake plain, brush with melted butter, toss in cinnamon sugar.
10-Serve warm with mustard or dips.
