Instructions

1-Getting started with these sourdough dinner rolls: Begin by feeding your sourdough starter 12 hours ahead, mixing 1 tablespoon sourdough starter with β…“ cup + 1 tablespoon all-purpose flour and 3 Β½ tablespoons water, then let it rise until it’s doubled and bubbly. This sets the foundation for that signature tangy flavor.

2-Melt and combine: Melt 2 tablespoons butter with 1 cup milk, 3 tablespoons sugar, and 1 teaspoon salt, then cool it to room temperature before combining with 3 cups + 2 tablespoons bread flour and Β½ cup active sourdough starter. Cover and rest the mixture for 1 hour at room temperature to let it develop.

3-Stretch and fold: Follow this with three sets of stretch and folds, spaced 30 minutes apart, and allow the dough to rise about 50% more for around 2 hours.
