Ingredients
1 tablespoon sourdough starter for the active sourdough starter
β cup + 1 tablespoon all-purpose flour for the active sourdough starter
3 Β½ tablespoons water for the active sourdough starter
2 tablespoons butter for the dough
1 cup milk for the dough
3 tablespoons sugar for the dough
1 teaspoon salt for the dough
Β½ cup active sourdough starter for the dough
3 cups + 2 tablespoons bread flour for the dough
1 tablespoon melted butter for brushing after baking
Instructions
1-Getting started with these sourdough dinner rolls: Begin by feeding your sourdough starter 12 hours ahead, mixing 1 tablespoon sourdough starter with β cup + 1 tablespoon all-purpose flour and 3 Β½ tablespoons water, then let it rise until itβs doubled and bubbly. This sets the foundation for that signature tangy flavor.
2-Melt and combine: Melt 2 tablespoons butter with 1 cup milk, 3 tablespoons sugar, and 1 teaspoon salt, then cool it to room temperature before combining with 3 cups + 2 tablespoons bread flour and Β½ cup active sourdough starter. Cover and rest the mixture for 1 hour at room temperature to let it develop.
3-Stretch and fold: Follow this with three sets of stretch and folds, spaced 30 minutes apart, and allow the dough to rise about 50% more for around 2 hours.
4-Shape and rise: Once risen, shape the dough into 12 balls, each about 65 grams, and place them in a greased glass baking dish. Cover and let them rise for 3-4 hours until puffy.
5-Bake and finish: Bake at 375Β°F for 25-30 minutes until golden and the internal temperature hits 190Β°F, then brush with 1 tablespoon melted butter right away. Prep takes about 15 minutes, cooking around 30 minutes, and resting adds about 8 hours, yielding 12 delicious rolls.
