๐Ÿ  This Loaded Sweet Potato Skins recipe offers a delicious way to enjoy nutrient-rich sweet potatoes packed with creamy, cheesy, and savory toppings.
๐Ÿฅ“ The crispy bacon and sour cream add indulgent textures and flavors, making it an irresistible appetizer or side dish.

  • Total Time: 1 hour 45 minutes
  • Yield: 8 loaded sweet potato skins

Ingredients

– 4 medium sweet potatoes for the base of the dish

– 1 tablespoon olive oil for drizzling on the skins to crisp them up

– 1/4 cup milk (buttermilk, whole milk, or half-and-half recommended) to mash and smooth the sweet potato flesh

– 1/4 teaspoon salt to season the mashed sweet potatoes

– Ground black pepper to taste adds a bit of spice to the mix

– 1 cup shredded cheese (a mix of sharp cheddar and mozzarella suggested) for topping and melting over the filling

– 4 strips of bacon cooked until crispy and crumbled provides a smoky, crunchy topping

– Sour cream for serving, to add creaminess

– Chopped chives for serving, to garnish and add fresh flavor

Instructions

1-First, preheat the oven to 400ยฐF (204ยฐC). Pierce the sweet potatoes several times with a fork to allow steam to escape.

2-Bake the sweet potatoes directly on the oven rack for 40-50 minutes until they are soft and tender, then let them cool enough to handle.

3-Slice each sweet potato in half lengthwise. Carefully scoop out the flesh, leaving a thin layer inside the skins to keep them sturdy.

4-Reduce the oven temperature to 375ยฐF (191ยฐC). Place the skins skin side down on a baking sheet, drizzle with 1 tablespoon olive oil, and bake for an additional 10 minutes to achieve extra crispiness.

5-While the skins crisp, mash the scooped-out sweet potato flesh with 1/4 cup milk, 1/4 teaspoon salt, and ground black pepper to taste until smooth and creamy.

6-Fill each baked skin with the mashed sweet potato mixture, top with 1 cup shredded cheese (a mix of sharp cheddar and mozzarella), and bake for 15 minutes until the cheese melts and bubbles.

7-Remove from the oven, top with the crumbled crispy bacon, and serve with sour cream and chopped chives for a finishing touch.
