Ingredients

– 1 1/2 pounds (approximately 680 grams) jumbo shrimp (16/20 size), peeled and deveined with tails on

– 1/4 cup (60 ml) olive oil

– 2 tablespoons lemon juice

– 2 tablespoons fresh chopped parsley

– 3 cloves garlic, minced

– 1 teaspoon dried oregano

– 1/2 teaspoon paprika

– 1/2 teaspoon salt

– 1/2 teaspoon black pepper

– 1/2 teaspoon crushed red pepper flakes (optional)

– Lemon wedges for garnish

Instructions

1-Peel and devein shrimp if needed, keeping tails on. Pat dry.

2-Combine 1/4 cup olive oil, 2 tbsp lemon juice, 2 tbsp chopped parsley, 3 minced garlic cloves, 1 tsp oregano, 1/2 tsp paprika, 1/2 tsp salt, 1/2 tsp black pepper, and 1/2 tsp red flakes (optional) in a bowl. Mix well.

3-Add shrimp, toss to coat, cover, marinate 15 minutes to 1 hour.

4-Soak wooden skewers in water 30+ minutes.

5-Preheat grill to medium-high.

6-Thread 4-6 shrimp per skewer.

7-Grill 2-3 minutes per side until opaque.

8-Garnish with parsley and lemon wedges. Serve hot.
