– 1 cup sliced carrots

– 1 cup sliced celery

– 2 cups cubed potatoes

– 1 cup drained diced tomatoes

– 2 sprigs fresh thyme

– 1 bay leaf

– 4 cups chicken or turkey broth

– 2 cups cooked turkey

– 2 tablespoons olive oil for sautΓ©ing

– 2 tablespoons all-purpose flour for thickening

– 1 teaspoon chicken bouillon optional for extra flavor

– Salt and black pepper to taste

– Chopped parsley for garnish

Instructions

1-Prepare all ingredients: Prepare all ingredients by washing, peeling, and chopping vegetables and measuring spices to ensure an organized cooking process.

2-Cooking onions and garlic: In a large pot, heat 2 tablespoons olive oil over medium heat, then add 1 cup diced onions and 2 cloves minced garlic. SautΓ© until golden, which takes about 2-3 minutes.

3-Add carrots and celery: Add 1 cup sliced carrots and 1 cup sliced celery to the pot and cook for one minute to soften them slightly.

4-Add broth and seasonings: Pour in 4 cups chicken or turkey broth, then stir in 1 cup drained diced tomatoes, 2 cups cubed potatoes, 2 sprigs fresh thyme, and 1 bay leaf. Bring the mixture to a boil.

5-Simmer: Simmer for 10 minutes or until the potatoes are tender, then mix in 2 cups cooked turkey.

6-Thicken the stew: To thicken, remove 1 cup of broth, whisk in 2 tablespoons all-purpose flour until smooth, and return it to the pot. Optionally, add 1 teaspoon chicken bouillon for extra flavor.

7-Final cooking and seasoning: Bring to a boil again and cook for a few minutes until thickened. Season with salt and black pepper to taste, then garnish with chopped parsley before serving.
