8 bone-in, skin-on chicken thighs

1 red onion cut into wedges

23 garlic cloves finely minced

3 tablespoons extra virgin olive oil

1 lemon juiced plus additional lemon slices

2 tablespoons za’atar spice blend

1 tablespoon sumac

2 teaspoons of a 7-spice blend (a mix of coriander, allspice, cumin, cloves, black pepper, cinnamon, and nutmeg; or a substitution of equal parts ground coriander, cumin, and cinnamon)

About 3/4 teaspoon kosher salt per pound of meat

Instructions

1-Start by gathering all your ingredients to make the process smooth and fun. Combine the 8 bone-in, skin-on chicken thighs, 1 red onion cut into wedges, 2-3 garlic cloves finely minced, 3 tablespoons extra virgin olive oil, juice from 1 lemon plus additional slices, 2 tablespoons za’atar spice blend, 1 tablespoon sumac, 2 teaspoons of the 7-spice blend, about 3/4 teaspoon kosher salt per pound of meat, and freshly cracked pepper in a large bowl. Toss everything together to coat the chicken thoroughly, letting those flavors meld.

2-Once mixed, cover and marinate in the refrigerator for 1 to 2 hours, or up to 24 hours if you want even deeper taste. When you’re ready, preheat your oven to 375°F (190°C) and transfer the marinated chicken, onions, and all that yummy marinade to a baking sheet or oven-safe dish. Roast it for 25 to 30 minutes until the chicken hits an internal temperature of 170°F (77°C) and the skin turns crispy and browned.

3-If you want extra crunch, pop it under the broiler for about 5 minutes at the end. Finish by garnishing with chopped parsley and serving hot alongside sides like rice, potatoes, or fresh salads. This method keeps the chicken juicy and full of that bold Mediterranean flair, making it a hit for home cooks of all levels.
