Ingredients

– 1 tablespoon of butter

– 2 strips of bacon

– 1 yellow onion

– 5 large eggs

– 1 cup shredded cheddar cheese

– 1 cup self-rising flour (or 1 cup flour plus 2 teaspoons baking powder as a substitute)

– 1/4 cup olive oil

– 3/4 pound (about 2 cups) shredded zucchini

– A pinch of salt and pepper

Instructions

First Step: Finely dice the onion and chop the bacon, then sautรฉ them in 1 tablespoon of butter over medium heat until the onion is soft and the bacon is golden; let cool.

Second Step: Grate the zucchini into a colander, sprinkle with salt, and set aside to drain moisture for about 10 minutes.

Third Step: In a large bowl, combine the bacon and onion mixture with 5 large eggs, 1 cup shredded cheddar cheese, 1 cup self-rising flour (or the substitute), and 1/4 cup olive oil.

Fourth Step: Squeeze the excess moisture out of the zucchini and add it to the bowl along with a pinch of salt and pepper, then stir to mix well.

Fifth Step: Pour the mixture into the prepared baking dish and bake for 35-40 minutes until firm and cooked through.

Sixth Step: Allow it to cool before slicing. The total preparation time is about 1 hour, including 15 minutes of prep and 45 minutes of cooking.
